Directions

Combine the vegetables and chickpeas in a large bowl. Whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss until evenly coated.

Veggie & Hummus Wrap

Ingredients

  • 1 whole-wheat tortilla
  • ¼ cup hummus
  • ½ avocado, sliced or mashed
  • ½ cup shredded carrots
  • Handful of fresh spinach
  • Sliced cucumbers

Directions

  • 3 cups cubed watermelon
  • ½ cup crumbled feta cheese

 Directions

Cucumber Tuna Boats

Ingredients

  • 1 large cucumber
  • 1 can tuna packed in water, drained
  • 2 tablespoons plain Greek yogurt or light mayonnaise

  • 1 teaspoon Dijon mustard
  • Black pepper to taste

Directions

Slice the cucumber lengthwise and scoop out the seeds. Mix the tuna with the remaining ingredients and spoon into the cucumber halves.
