Sauteed Chicken and Vegetables

Eating healthy doesn’t have to take a lot of time or effort. In a matter of 15 minutes, you can have a nutritious and healthy meal on your table. Using pre-cooked protein and precut vegetables, whether you cut them up ahead of time yourself or bought them that way, can save you so much time during the week when you’re rushing to get dinner on the table.

This sauteed chicken and vegetables recipe is so easy, that even someone with absolutely zero culinary skills can make it. We’re not joking. All you do is simply add ingredients to the pan and you have a delicious meal ready to be eaten.

Using lean protein, such as chicken, helps to keep the fat content down. And by using precooked meat, you can skip the salt because it already has flavor. This recipe is full of nutrient-rich vegetables all offering an array of vitamins. If you don’t like one of the vegetables, feel free to leave it out and add one you do like. You can adapt this recipe to fit your liking or your family’s tastebuds.

This is also a great recipe that you can alter to fit the season. Change it up depending on what vegetables are in season and you have a completely different meal every few months.

Sauteed Chicken and Vegetables

Servings: 2

Ingredients:

2 oz Red, yellow, and green peppers (diced)

2 oz Onion (diced)

3 oz Broccoli (chopped into florets)

3 oz Cauliflower (chopped into florets)

2 oz Sliced carrots

2 oz Corn

2 oz Chicken breast (precooked and diced)

1 oz Cilantro

2 oz Avocado oil

1 oz Garlic

1 tsp Rosemary

1 tsp Thyme

1 tsp Oregano (optional)

 

Directions:

  1. Heat avocado oil in a medium pan.

 

  1. Saute carrots, peppers, and onions.

 

  1. Add garlic, rosemary, thyme, and oregano (if using) to vegetables.

 

  1. Add chicken to vegetable mixture.

 

  1. Add broccoli and cauliflower.

 

  1. Toss corn into the pan.

 

  1. Continue sautéing until vegetables are tender and caramelized.

 

  1. Spoon mixture into two dishes. Serve and enjoy!
